This Tofu with Spinach and Chickpeas dish looks like exactly the kind of thing that I need to be eating right now. But I am not. Everything is awful.
Finally: I love chickpeas, they’re so versatile! They’re the Meryl Streep of the bean world — able to effortlessly blend into hummus, or get all crispy-fied and extra seasoned in falafel. The similarities are endless! (???)
