Make your own vegan fig (well apple) newtons!! These look soooo good and I am adverse to most things made with wheat flour but dear lord, I love a newton. If loving a newton is wrong, lock me in jail made of newton’s and make me eat my way out as punishment. I’LL NEVER LEARN EVER!!!

Apple Cinnamon Newtons - Yikes!
Cookie:2 cups wheat flour¼ cup oats, ground fine1/2 tsp sea salt1/2 cup vegetable margarine1/4 tsp baking soda1 tbsp baking powder2 tbsp Molasses
Filling:1.5 lb fresh apples, peeled and chopped1/2 cup sugar2 tsp cinnamonJuice of a lemon
To make Cookie: in a medium bowl, whisk together flour, oats and salt. In a large bowl, using a mixer beat the “butter” and molasses until well-combined. Add flour mixture, and beat until combined into a sticky dough. Turn out onto a sheet of plastic wrap, wrap it up, and press down to flatten a bit. Chill in refrigerator.
In a saucier or medium sauce pan, combine apples, cinnamon, half of the sugar, and half of the lemon juice. Mash a few times with a potato masher or fork. Cook mixture over medium-high heat until bubbling and sugar has dissolved; reduce heat to medium-low and simmer, stirring occasionally, for 30 minutes, until it has reduced by about one-third and is beginning to gel. Set aside until completely cool.
Preheat oven to 350 degrees . Cut dough into four pieces. On a well-floured surface, roll the first piece out to about 12 inches by 6 inches. Place on cookie sheet. Spread about 1/4 cup of the cooled jam along half of the sheet of pastry, lengthwise (ie, the 12-inch side), leaving a 1/2-inch border along the edges. Fold the other, naked side of the pastry over the jam-spread side, and press down on edges to seal. Create tiny slits with a knife on surface of pastry, about 2 inches apart, to allow air to escape while baking. Repeat with remaining three sections of dough, ending with 2 pastries on each cookie sheet. Bake for 25 minutes, or until pastry is just beginning to turn golden.
Cool on cookie sheets for 10 minutes, then slice into bars.

Hanukkah cupcakes at Sweet Avenue Bakeshop (we LOVE THEM). Will someone please transplant New Jersey next to my apartment in Oakland? Or will that be a kind of craziness that world cannot allow?? Probably. Anyway, DO WANT!

What is that, you ask? Well, it’s only Pumpkin Seed Mylk! Crazy, right!? And fucking awesome! Of course I found this while cruising recipe porn this morning on the glorious Choosing Raw. Gena is like, the most inspirational. She makes me want to be a better person without hating the person that I am. That is a rare quality in a person! And especially a blogger! Anyway, cruise all her awesome raw (and a few cooked! See, Gena is all about moderation!) recipes and tell me you don’t love her too. Plus, PUMPKIN SEED MYLK!! Let’s do this, autumn.

I’m moving right now and supposed to be packing so I don’t really have a moment BUT HOLY SHIT. That is a cake made with crepes and whipped cream and fresh fruit. Moving is hard but that cake is easy. I don’t even know, moving is tiring and making me loooooooopy!

It’s the Second Annual Vegan Cupcake-Off! We posted about last year’s (I think, our search function is for shit so I can’t find evidence that we did except my own vague recollection and I can’t remember what I had for breakfast so FOLKS WE’S IN TROUBLE) but anyway, it appears to be rad. You should enter and win a million dollars!!! Or um, not sure if you can enter at this point but you should show up with $4 and EAT EAT EAT. All-you-can-eat vegan cupcakes? Um, yeah. There’s also a chance to do some cupcake-related screenprinting, and a cupcake photobooth (!? I don’t know what that is but I like the sound of it!).
It’s from 2 to 4 p.m. on Saturday, May 22 at Rock Paper Scissors Collective at 2278 Telegraph Ave. in Oakland. Be there or be skinny!

How to break a matzo in half and then make a Nutella sandwich. Genius. And instead of Nutella, use the tastier, more vegan version of chocolate hazelnut butter by Justin’s Nut Butter. YOUR READ RIGHT, JUSTIN’S NUT BUTTER. Oh you’re laughing? Well so is Justin, all the way to the mickey fickey bank because his nut butter is delish.

Chag Pesach Sameach, Jews!
