Katieg’s Entry: Lemon Curd Cake with Coconut Glaze
This is a super-hard contest, but I though the overachievers among us ought to know about it (the rest of us can just profit from the results): Earth Balance wants you to make delicious baked goods with their products. Duh, easy. Does anyone NOT use Earth Balance in baking?
Except here’s the catch: You have to invent the recipe yourself. That usually doesn’t go so well in my house; we’re still rehashing the Chutney Pie Debacle of 2006. But if you fancy yourself an up-and-coming Isa or Colleen, then by all means, invent away. That’s not the hardest part!
After slaving away over 17 drafts of the perfect Peanut Butter Banana Chia Açai Spice Drops, YOU HAVE TO TAKE A PRETTY PICTURE OF IT! I shall never be a professional chef in the internet age. My food photos are all grainy and dark and show how messy my house is.
After all that, you could win a sweet trip to Vegas, which you will need to recover from the stress of entering this contest. Oh, and there are categories. We already missed pies and cake.

It’s Old Fashioned Creamy Rice Pudding from Julie Hasson!
Now, a story.
I was in bed last night, about to actually fall asleep, when I had to sudden urge to
stalk someone check something on Facebook and a picture of this pudding was in my feed so I got up and made it! I don’t know what is wrong with me but all of a sudden my desire for delicious rice pudding was more important than anything else. And you know what? FUCKING WORTH IT. It’s great because it’s a delicious dessert made with ingredients that you probably already have in your house AND she has some great variations on it, too. I added raisins because I’m a boss. Enjoy!

As a gentile who has been called a shiksa by more than one grandmother, let me say to you from the bottom of my heart: HAPPY PESACH! And also, “Whatever, your grandson can date who he wants! I kid, don’t murder me!”
Now, onto the food, the most important part of any holiday. Here’s a recipe from the no-longer-updated-but-still-beloved heeb’n’vegan for sweet potato dumplings in tomato-Brazil nut sauce! I will soon be eating this in solidarity with the holiday and also, all things delicious! Then, I’ll be drinking several of these cocktails inspired by the Seder plate. Gotta love the holidays!

If you ever have the pleasure of meeting a Texan, you will learn three things:
1) They aren’t nearly as fat as the news leads you to believe. I was gypped! Is that an offensive term? Do any gypsies* know? Oh wait, is that offensive, too??
2) They know Southern hospitality! Seriously, Texans are very friendly and awesome. Wait, are they considered part of the south? Is that offensive?
3) They LOVE breakfast tacos! There’s no offending people there, it’s just a fact!
Lazy Vegan Smurf, the princess who taught me how to live during my time in Austin, just added a recipe for breakfast tacos to her blog, and I’m very excited to make it. The recipe is adorable, hilarious and awesome, just like her! I can honestly say that I messed with Texas, and I loved it!
*I can say that because I come from a long line of gypsies and other such scoundrels! And I can say that because I once had sex with a scoundrel. BAM!
