![Fusion tacos, COME TO ME. Last year at Vida Vegan Con, Laura and I went to a cooking demo with Joni and our pal Kelly Peloza (love you!), and they made the most delicious Indian-inspired food, and then we got the recipes, and then we got to eat it, and then I actually died of food joy and was tragically reincarnated as myself.
But lucky for new-me, Joni continues to mix flavors and textures to make the most beautiful, flavorful food, hearty and healthy and so delicious, holy moly. These tacos! I cannot wait to mix up a big bowl of that sesame carrot coleslaw and mainline it.
