Happy Thanksgiving from reader Amber in Seattle! She and her roommates Lola and Remi (with the glamourous names!) made what sounds like a literal ton of food; pictured on this plate are Tofurky cooked with butternut squash, apples, mushroom, onion, potato, and carrot; stuffing with heaps of mushroom gravy; biscuits; green bean casserole; baked mashed potatoes with Daiya; cooked kale and chard; roasted sunchokes and parsnips with sesame oil; and baby greens salad with cucumbers and beets. She says that this was her “first time having sunchokes EVER and they are [her] favorite new TASTY discovery.” Happy Thanksgiving, Amber!

On the main plate is, clockwise from top left, nut roast extraordinaire, corn, green bean casserole, oyster mushroom stuffing, orange-cranberry sauce, and in the center, mashed potatoes and “turkey” gravy. In the upper right corner, a bowl of chestnut and celeriac soup with sherry-cider reduction; in the lower right, chopped salad with “honey”-lemon poppyseed vinaigrette. Happy Thanksgiving from reader Andi, who writes that her vegan potluck was “bomb dot com. Two types of stuffing, Tofurky, maple chipotle glazed Field Roast, brussels sprouts, sweet potatoes with Dandies marshmallows, stuffed acorn squash, sweet potato knishes, pear and endive salad with candied pecans, butternut squash and mushroom tart, green bean casserole, and mashed potatoes with gravy. For dessert? A layered chocolate and vanilla crème brûlée custard, pumpkin pie, and baked apples with Soy Whip!”
And that would explain the place settings at what is clearly a desk, and why those two plates are piled obscenely high with food. Andi and friends, your potluck gets the Vegansaurus stamp of gluttonous approval. We are so, so proud of you. Happy Thanksgiving!

Happy Thanksgiving from Kristen, just outside of Chicago! She filled her table with savory herb stuffing, cinnamon roasted sweet potatoes and squash with candied walnuts, green bean casserole, super-creamy mashed potatoes, cashew gravy, corn pudding, and Tofurky roasted with carrots and brussels sprouts. We also really like the flowers and the construction-paper turkey—it’s definitely a step up from the standard hand turkey. Also, cashew gravy? Yes, please!
