Happy Thanksgiving from reader Kristen, who writes that “because I’m a type 1 (juvenile) diabetic, I made a low-carb version of my usual vegan Thanksgiving. What’s pictured is Brussels sprouts, some homemade Tofurky, peanut butter kale, almond butter vinaigretteĀ green beans, and almond meal drop biscuits.” Sounds tasty!

Happy Thanksgiving from Wendy, who created this VEGAN TURDUCKEN for her Pennsylvania restaurant Balasia. Wendy, you are a genius. Put that in lights. GENIUS. The next time we’re in Hereford, Pa., we are going straight to Balasia and eating everything on the menu. Seriously, you guys, VEGAN TURDUCKEN. At her first gluten-free Thanksgiving, she and her dinner companions enjoyed “Tofu roast from Hodo Soy Beanery (love them!), orange cranberry sauce, sage mashed potatoes, winter squash, carrots, green beans, cornbread stuffing, and mushroom gravy. That Hodo Soy roast was delicious!”

Happy Oklahoman Thanksgiving from Jennifer! She had “Tofurky and gravy, stuffing, sweet potatoes with walnuts, salad, fresh cranberries, roasted Brussels sprouts, green beans amandine (with smoked almonds), and iced tea (the house wine of the South!). Not pictured is my tofu pumpkin pie (and pumpkin cheesecake a coworker made for me yesterday)!! OKLAHOMA VEGANS ON THE MAP!”

Happy Thanksgiving from Kelly of Fuck Yeah Vegan Pizza and her UTTERLY BONKERS Thanksgiving pizza. She says, she and her husband made pizza “layered with garlic and chive mashed potatoes, gravy, hickory-smoked Tofurky deli slices, carrots, sweet corn, and green beans, all on a veggie broth-infused crust. Served with sides of stuffing, extra gravy, homemade cranberry sauce, and mashed potatoes and mixed veggies (both left over pizza toppings)…. IT WAS INEVITABLE.”
Kelly is a national treasure, you guys, and if you aren’t following (and submitting to!) Fuck Yeah Vegan Pizza, you are doing the internet wrong.

She and her husband (and super-cute dogs) had “Tofurky, Fat Free Vegan’s green bean casserole, fruit and almond stuffing, scalloped potatoes (veganized from recipes.com), roasted brussels sprouts, whiskey glazed carrots and parsnips (modified from Pioneer Woman), citrus cranberry sauce, and pumpkin pie.” Yay for vegan feasts indeed, Kristen!
