Happy Thanksgiving from reader Kristen, who writes that “because I’m a type 1 (juvenile) diabetic, I made a low-carb version of my usual vegan Thanksgiving. What’s pictured is Brussels sprouts, some homemade Tofurky, peanut butter kale, almond butter vinaigretteĀ green beans, and almond meal drop biscuits.” Sounds tasty!

Happy Thanksgiving from Kristen of Different Shades of Green! She and her husband (and super-cute dogs) had “Tofurky, Fat Free Vegan’s green bean casserole, fruit and almond stuffing, scalloped potatoes (veganized from recipes.com), roasted brussels sprouts, whiskey glazed carrots and parsnips (modified from Pioneer Woman), citrus cranberry sauce, and pumpkin pie.” Yay for vegan feasts indeed, Kristen!

Happy Thanksgiving from Kristen, just outside of Chicago! She filled her table with savory herb stuffing, cinnamon roasted sweet potatoes and squash with candied walnuts, green bean casserole, super-creamy mashed potatoes, cashew gravy, corn pudding, and Tofurky roasted with carrots and brussels sprouts. We also really like the flowers and the construction-paper turkey—it’s definitely a step up from the standard hand turkey. Also, cashew gravy? Yes, please!
