It’s another delicious vegan dinner from reader Ron! This is roasted butternut squash over spinach and strawberries with a maple pecan glaze.
Ron says, “I split the squash in half lengthwise, scooped out the seeds, and  cooked it face down in a pan of water at 350 F for an hour. For  the glaze, I melted a couple of tablespoons of Earth Balance, added some  maple syrup and crushed pecans. The tart of the spinach & strawberries offset the sweet of the maple syrup nicely.”

“Lemon trollop” tart by Wanda of Thursdays with Wanda! She sent me the link to her blog and guess what, it’s fantastic. So many recipes, plus art! She has not always been a vegan while keeping this blog but the important thing is, obviously, that she is now and makes amazing things like vegan unagi and cartoons about insensitive vegetables.

Reader Mike from Santa Cruz sent this photo of his giant, gorgeous pizza made with homegrown zucchini, artichoke hearts, and Daiya. “The crust is a wonderful made-to-order vegan crust from the Grateful Bread Company in Sacramento.”
It looks so good, I want to put it in my face, like, yesterday. Thanks, Mike!

East Coast-style Fourth of July!  »

Vegans are amazing! Check out this spread from Aimee’s Fourth of July BBQ near Annapolis, Md. Fourth of July veganism, coast to coast!
Featured: pesto pasta salad with tomatoes, potato salad with Torfurky Smoky Maple Bacon Tempeh, Gardein beefless burgers, Perfect Grilled Portobellos, Tofurky veggie dogs, organic corn, assorted dips and guacamole from Roots Market, plus Aimee’s new favorite condiment, Spicy Red Pepper Miso Mayo. Dessert included fresh peach ice cream and Sticky Fingers brownies and Cowvin cookies.
