Crispy Potato, Onion, and Mushroom Rösti from Serious Eats’ month of vegan! I don’t really know what this is but I think I’m in love. But that’s how love is sometimes, no?
I think it looks like a hashbrown cake. I need it. Hashbrown and cake are two of my favorite words.

Product Review: Ikea potato fritters! »
Looky looky here! I was at the Ikea in Philly and they had these vegan potato pancakes in their food shop! I present, RÖSTI frozen potato fritters. Another reason to love Ikea! As if you needed any more.
I had to get some because I’m totally meschuge for latkes. I fried them up in some olive oil and they were awesome! I recommend eating them with applesauce and vegan sour cream but ketchup will do in a pinch. Goddamn do I love Ikea!
