Late summer (and early fall, and early summer, and late spring) is HOT HOT HOT in my part of Northern California, and all I want are cold foods. Just giant salads and oceans of vegan ice cream.
That’s why I recommend you make this cashew-milk salted caramel ice cream as soon as possible. The author, Jennifer Barckley, took two years to perfect her recipe, which probably means it is amazing. What was the last thing you spent two years on?
I admit, both desserts seem a bit more labor-intensive than I like (I am a lazy, sweaty lump), but if you want to impress people and cool them off, serve them one of these beautiful dishes. They will be offering to have your babies by bite three, guaranteed. BRILLIANT IDEA: What if you made cashew-milk salted caramel ice cream and served it with fresh peaches and a balsamic reduction? Serve it to your neighborhood and watch them worship you as a kitchen deity!
If you want to go the easy route, though, vegan Miriam Krule and some of her family members did a six-brand taste-test of grocery store vegan ice creams over at Slate. Unsurprisingly, So Delicious was their favorite, and nobody liked weird old Tempt.

While summer temperatures soar, it’s great to cool down with refreshing chilled smoothies for a hearty breakfast or brunch. Recently reunited with my culinary muse and partner extraordinaire Courtney Pool, I have been inspired to throw heaping tablespoons of maca into recipes. She doesn’t seem to mind, bless her raw vegan gorgeous heart.
Maca adds a caramel-malt flavor, which is well combined with ingredients like indulgent cacao, protein-rich hemp seeds, omega-3- and bulk-adding chia seeds, and alkalizing superfood powder Vitamineral Green. Experimenting with local, fruity accents like strawberries or other berries can add color and texture to round out your delicious, nutrient-dense meal.
Here are the two latest recipes I have created. Hope you like them as much as my muse and I have. To make, just put all ingredients in a blender and combine. Enjoy!

4 Tbsp. Chia
1 Tbsp. Vitamineral Green
1 to 2 Tbsp. Cacao powder
1 to 2 Tbsp. Maca
1/2 cup Pumpkin seed milk
3 tsp. Hemp seeds
Lucuma (to taste)
Stevia (to taste)
Strawberry maca elixir
The secret is in the garnish! Chopped raw cacao paste or raw cacao nibs or bars, bee pollen, plus strawberries make this super-decadent. You can also garnish with mint, or any other type of berry or superfood.
This smoothie is best enjoyed with a friend or lover.
4 Tbsp. Chia
1 Tbsp. Cacao powder
1 Tbsp. Hemp seeds
1/4 cup Almond milk
1/4 cup Pumpkin seed milk
1 to 2 Tbsp. Maca
Stevia (to taste)
Lucuma (to taste)
Bee Pollen (garnish)

Remember Archie, the tiny “chef” who helped his daddy cook this soup that I have now made variations of at least 20 times because it is so good and also Archie and his daddy are so freaking adorable? We now have a rival father-son soup-making video, courtesy Chow’s “My Go-To Dish” series: this video features super-fancy chef Daniel Patterson (of Coi! and Plum!) and his kid making a summertime soup of eggplant, zucchini, tomatoes, beans, purslane, and basil. You guys all I want is space for a small garden—herbs, a couple greens, vertical tomatoes—and a bunch of animals and babies. OK and the internet, I love the internet. But for real, let’s all adopt animals and small children and grow our own food and be friends with the neighbors and make this chilled eggplant soup. This is the summer of our aspiration. Yes, we aspire to soup. Shut it, soup is the best.

Vegan summer-sandal round-up at Ecouterre! My favorite are these booties by Cri de Coeur; they’d keep your feet cool and far away from the filthy pavement, plus walking on big wooden heels makes you feel tall and powerful.
These are all women’s sandals because no one wants to see a dude’s feet. Put your toes away! Also put away your flip-flops, everyone, they are indoor-only. “But they’re so comfortable and rubber shoes are totally vegan!” They are also tacky and lazy.* Plus there are lots of comfortable shoes out there that you would never wear in a hostel shower. COME ON. What about these flats from Big Buddha? They’re nice and uncomplicated and million times better than a grody flip-flop.

*My other strict fashion rules include: no pajamas/workout clothes outside of the home/gym (even the OnePiece!); no Birkenstocks outside the home; no visible undergarments (no one ever died from wearing a slip goddamn it).
