Whenever Wanda publishes a new recipe, I get super-excited and wish she would write more. How dare life get in the way of my vegan food porn?
This is jicama gado-gado, which combines two of my favorite things: crunchy, delightful jicama,* and spicy, tangy peanut sauce. Plus a lesson in knife skills and draining tofu without compression. Wanda, you’re the best!

Vegan spanakopita with homemade rice “feta” cheese over dandelion greens with caramelized onions! Thursdays with Wanda is so great, Wanda is hilarious and makes really tasty-looking food. I quote: “Dandelion greens are high in Vitamin A, C, and K. That spells ACK!” This recipe features double greens for super-high nutritional value, plus oily delicious phyllo dough, yes please.
